Nomades
Walking or skating back to Bastille, you can find Nomades from where
the Paris & Coquillages skates leave on Sunday afternoons (start is at 2:30,
back for 5-5:30). They do skate hire.

Au Vieux Campeur
In the Latin Quarter (south bank ; "the intellectual one..."). They have
lots of small outlets each specializing in one kind of activities: climbing,
scuba-diving, skating, trekking, and so on and so forth. Very well known for
the immense knowledgeability of their staff.
Can't say much about their skating shop as I've never been there myself.

is for hockey gear only (roller or ice, but more ice than roller though).
